A Funeral for Pasta and Bread

I have lupus, fibromyalgia, interstitial cystitis, IBS, asthma, tachycardia, CRPS/RSD, chronic kidney disease, and spine problems.  Well today I got a call saying I need to add celiac disease to this list.  Oh joy!  It doesn't surprise me, but it saddens me.  Celiac is in the auto immune group just like some of my other diseases.  This diet won't cure any of my other problems. There is no cure for many of them. It will help with my intestinal damage though. I just had to say that, because it is irritating when people suggest that a diet change or other alternative methods will cure me. I've tried most of them.

 This is going to be a super hard lifestyle change for me. If you ask me what my favorite food is, my answer is pasta.  I also enjoy my breads.  I now have to say R.I.P. to these things.  This is just one more reason I will never live a "normal", carefree life. 

I did commit to this diet about 15 years ago, without a confirmed diagnosis of celiac.  I actually became severely malnourished and had to stop it.  I am hoping that it wont be that way this time around.  I know awareness and store/restaurant participation has changed drastically since then. I am also grateful to sites like pinterest that have tons of gluten free recipes. 

Other hurdles that will make this transition hard are cost and my boyfriend not wanting to eat healthy foods.  I am not looking forward to cooking 2 meals at a time.  1 is hard enough!  I wish I had more support in that area.

I have to wonder why so many people are now unable to tolerate such a fundamental part of the human diet.  Wheat and other grains have been consumed since the beginning of time.  What has changed?  Things that make you say "hmmmm". 

I have some research to do and some recipes to gather.  I will post good gluten free recipes as I try them.   Here goes nothing....

  1. Hey, I know I have not spoken to you a long while. I was diagnosed with Celiac Disease last week. I asked to be tested because of my youngest & it turns out I have it. Now I need to get my youngest re-tested since he has symptoms. I have been researching a lot. I have read one book & I am on my second book. Take a look at my Goodreads Read, Currently Reading, & To-Read List. The no pasta thing hit me hard, too. I love pasta, but I am ok with it knowing that I won't get sick now. GF foods are not going to be bad. Good luck.
