I found this one on pinterest. When I cooked mine, according to the recipe, it came out too dry. The only veggie I had on hand was onion. I think that the addition of zucchini and/or tomatoes, could help add moisture. I am also omitting the bread crumbs and suggesting to cook it covered. I ended up throwing more cheddar on mine and throwing it into the microwave for a minute.
Ingredients:
1 cup quinoa
1/2 cup milk
1 cup of cheddar cheese
1/2 cup of Monterrey Jack cheese (you can substitute with your cheese of choice)
Grated Parmesan
1 egg
Veggies of your choice (onion, zucchini, and tomato are good choices)
Olive oil
salt, pepper, garlic, other spices to taste
Instructions:
1. Cook your quinoa according to the package, until it is tender.
2. Saute' your veggies with olive oil until they are slightly translucent.
3. Whisk the milk and eggs in a bowl, then add the cheese and spices to that mixture.
4. Add the contents of the bowl and cooked veggies to your quinoa.
5. Pour into a greased baking pan.
6. Sprinkle Parmesan (and extra shredded cheese if you want) on the top.
7. Cover and cook at 350 degrees for about 20-30 minutes.
