Continuing on with using up my pounds and pounds of zucchini.....
Ingredients:
- Thick, circular slices of zucchini
- Mozzarella cheese
- Pizza sauce
- Your favorite pizza toppings (I just did baby pepperoni)
Instructions:
- Preheat oven to 400 degrees.
Cook your zucchini slices, with some olive oil, in a frying pan until they start to get soft and browned on both sides.
- Once they are soft and browned, place them on a baking pan.
- Spoon some pizza sauce onto each slice.
- Sprinkle mozzarella cheese on each slice.
- Add the toppings of your choice.
- Bake at 400 for about 10-12 minutes. Keep an eye on them, because some ovens may take more or less time to cook them properly. Burnt pizza is icky! =)
I think these would be great for people on a gluten free diet. Just make sure the pizza sauce is gluten free.
