Cheezy, Gooey, Enchilada Stacks

Here is another melt in your mouth recipe I stumbled across.   Nom, nom, nom!  

Ingredients:
  • 1 can of red enchilada sauce
  • 1lb of ground beef
  • small can of chopped green chile peppers
  • 1 can of re-fried beans
  • 1 bag of shredded cheese (Mexican mix is best)
  • 6 Large tortillas  (8 inch)

Instructions:
  • Brown 1lb ground beef in a frying pan, drain the fat. 
  • Mix your can of sauce with your browned meat. (set aside about an 1/8th cup of the sauce for later)
  • Preheat the oven for 400 degrees. 
  • Grease a pan. 
  • Lay down your first tortilla, directly onto the pan. 
  • Spread a layer of meat mixture over the tortilla, then sprinkle with cheese. 

  • Place the next tortilla on the stack. 
  • Spread a mix of re-fried beans and chile peppers over this layer, then sprinkle with cheese. 
Repeat these layers 2 more times.  
  • Bake your stack in the oven for 40 minutes. 
  • Remove from oven, then spread the remaining enchilada sauce over the top and sprinkle with cheese. 
  • Return to the oven for 5 more minutes.
