Here is another melt in your mouth recipe I stumbled across. Nom, nom, nom!
Ingredients:
- 1 can of red enchilada sauce
- 1lb of ground beef
- small can of chopped green chile peppers
- 1 can of re-fried beans
- 1 bag of shredded cheese (Mexican mix is best)
- 6 Large tortillas (8 inch)
Instructions:
- Brown 1lb ground beef in a frying pan, drain the fat.
- Mix your can of sauce with your browned meat. (set aside about an 1/8th cup of the sauce for later)
- Preheat the oven for 400 degrees.
- Grease a pan.
- Lay down your first tortilla, directly onto the pan.
- Spread a layer of meat mixture over the tortilla, then sprinkle with cheese.
- Place the next tortilla on the stack.
- Spread a mix of re-fried beans and chile peppers over this layer, then sprinkle with cheese.
Repeat these layers 2 more times.
- Bake your stack in the oven for 40 minutes.
- Remove from oven, then spread the remaining enchilada sauce over the top and sprinkle with cheese.
- Return to the oven for 5 more minutes.
Enjoy!
