Today I tested a recipe for chicken dumpling stew. This is what I will be serving my family on Christmas Eve. I am obsessed with crock pot cooking! This recipe is very easy and tastes wonderful. It is definitely a "comfort food" meal. I got the recipe off of Campbell's Kitchen website and then tweaked it a bit to make it my own. I usually don't use recipes, so it is hard for me to stick to the rules of one 100%. I like to experiment =)

I changed it by adding:
1 cup of onion- finely chopped
3 tablespoons of butter
3/4 tsp. of sage
1/2 tsp. rosemary leaves
1/2 tsp. thyme leaves (less than recipe)
1/2 tsp. of coarse black pepper (more than recipe)
I bought pre-packaged herbs made by McCormick. It is a pack put together for making chicken dumplings. How easy!
I saved the 3/4 tsp. of parsley, that came in the package, to add the biscuit mix I used for the dumplings.
I used Betty Crocker cheese and garlic biscuit mix for my dumplings, instead of the all purpose mix that the recipe calls for. This added fantastic flavor! It took about 1 hour, on high, for the biscuits to cook all the way through. I did tilt the lid to vent it.
I used leftover chicken from another meal to make this batch. I plan to use a precooked rotisserie chicken for the next batch. I like the dark and well marinated meat.
