I was out of town again, so I haven't had time for a lot of blogging lately. This is a quick one...
I found these awesome Mexican skillet packets made by Frontera. I found them in the tex mex isle at the grocery store. They had them for tacos, enchiladas, fajitas, and stir fry mixes. I got the one for making fish or shrimp tacos. I used tilapia (since that's the fish I buy most of). All I had to do was cube my fish. pour the packet over it, then cook. It turned out great. I added some avocado slices and fresco cheese. These are definitely worth a try if you want something quick and easy.
I am also happy to report that one of my orchids has fully re-bloomed! I'm still waiting on the other 2 to follow suit. =)
