Egg Salad Sandwhich With Ham and Fresh Herbs

I am thankful for leftovers today, because I have the flu.  I know many of us have leftover ham and hard- boiled eggs to use up this week.  Instead of just a blah egg salad sandwich, I spiced it up a bit.  I used what I had on hand.  I grow my own herbs, so they are easy to grab.  I'm sure several other things would taste good on this mix as well.  Experiment! 

Ingredients: 
2  hard-boiled eggs cubed, ham cubed, about 2 tablespoons of mayo, a dollop of mustard, a dash of salt and pepper, chives, parsley, cilantro, green onion.  (I did have some leftover for a 2nd sandwich)

I used my magic bullet to chop and mix the mayo, mustard, herbs, onion and eggs together.  I added the ham cubes afterward, so that the ham was not mashed up.   Then I spread it on some yummy sourdough bread and served with a bowl of soup.  Good meal for a flu day.
