Stuffed Pork Tenderloin

This is one of my own recipe ideas.  My favorite tenderloin is marinated in teriaki.  I shop Aldi and they always carry the pre-marinated kind. 

In order to stuff  it, I make a cut down the center to create a pocket.
There are several options for stuffing.  I have used regular stuffing mix, Parmesan cous cous, and this time I used mushroom risotto with some green onions on top.  I like to switch it up and try new flavors. 
Pork tenderloin is cooked at 350 degrees for about 20 minutes per pound or until the internal temperature of the meat hits 160 degrees.  I used my Oneida digital meat thermometer that alerts me when it reaches the right temperature.
