Bacon Cheeseburger Meatloaf

I love meatloaf!  I decided to veer away from my normal recipe and try something new.  I usually just eyeball my ingredient amounts when making up my own meatloafs, but I will do my best in measuring for you.   If you want to change to amounts to your liking, go for it!  =)


Ingredients:
  • 1lb of meatloaf mix (50/50 ground beef and ground pork mixture)
  • 1/8th C BBQ sauce
  • 1/4 cup ketchup  (then a little extra on top of the loaf)
  • 3 TBS mustard
  • 1/2 C bread crumbs
  • 1/4th cup chopped onion
  • 7 slices of bacon or 1/8th C bacon bits  (turkey bacon did not give a strong enough flavor to be noticeable)
  • 1 egg
  • Handful of  shredded cheddar cheese

Directions:
  • Preheat the oven for 350 degrees
  • Cook your bacon in a frying pan, until crisp
  • Put your meat, BBQ sauce, ketchup, mustard, breadcrumbs, onion,  4 cooked bacon strips (torn into pieces), 2 eggs, and cheese into a large bowl.  Use your hands to mash all of the ingredients together until it is uniformly mixed.  
  • Grease a loaf pan and press your meat mixture into it.  I use "The Perfect Meatloaf Pan" because it lets the fat drip out of the loaf.  
  • Add your last 3 pieces of bacon, a drizzle of ketchup, and a little bit more cheese to the top of your loaf. 
  • Cook the loaf at 350 degrees for 45-50 minutes.
  • Slice and serve!
