Ingredients:
- 1lb of meatloaf mix (50/50 ground beef and ground pork mixture)
- 1/8th C BBQ sauce
- 1/4 cup ketchup (then a little extra on top of the loaf)
- 3 TBS mustard
- 1/2 C bread crumbs
- 1/4th cup chopped onion
- 7 slices of bacon or 1/8th C bacon bits (turkey bacon did not give a strong enough flavor to be noticeable)
- 1 egg
- Handful of shredded cheddar cheese
Directions:
- Preheat the oven for 350 degrees
- Cook your bacon in a frying pan, until crisp
- Put your meat, BBQ sauce, ketchup, mustard, breadcrumbs, onion, 4 cooked bacon strips (torn into pieces), 2 eggs, and cheese into a large bowl. Use your hands to mash all of the ingredients together until it is uniformly mixed.
- Grease a loaf pan and press your meat mixture into it. I use "The Perfect Meatloaf Pan" because it lets the fat drip out of the loaf.
- Add your last 3 pieces of bacon, a drizzle of ketchup, and a little bit more cheese to the top of your loaf.
- Cook the loaf at 350 degrees for 45-50 minutes.
- Slice and serve!
