
Here is my meatloaf recipe:
-1lb of 50/50 ground pork/beef
I place the meat in a mixing bowl and add:
- 1/4 cup ketchup
- A couple good squirts of mustard
- 1/2 cup bread crumbs
- 1 egg
- pinch of salt and pepper
-1/4 cup chopped onions
- handful of shredded cheddar cheese
- This time I added fresh oregano and sage from my garden as well.
I then use my hands to mush the meat and ingredients all together. It's messy, but kinda fun.
I then press it into the pan after greasing the sides. In this pan, the meat sits up off the bottom, so that the fat can drain out.
I add more ketchup and shredded cheese to the top of the loaf before baking.
I bake it at 350 degrees for about 45-50 minutes.
I used my devil pan grabber (Christmas gift from my sister) to pull the pan and rack out. =)
It turned out fantastic! It cooked very evenly and the meat was super moist, without a lot of the fat grease you get in a normal pan.
YUCK! Being able to take all that fat out makes this pan awesome! The pan came with several meatloaf recipes, so I will blog those as I try them. Some that sounded interesting are the french onion and the bacon cheeseburger. It is also good for cooking stuffed peppers.
