2 Leftover Chicken Recipes

I like to buy whole cooked chickens, because they can create so many different meals.  Aldi is selling whole cooked chickens right now.  They are boneless loafs.  The meat was really tender and there was very little fat in the whole thing.  I made the 2 following recipes with the leftover meat:

The first one is my own concoction.  
Cheesy Chicken and Veggie Casserole.
Ingredients:
  • Chicken (about 2 cups cubed)
  • 1 cup white rice
  • Veggies of your choice (I did carrots, mushrooms, and broccoli)
  • 1 small can of Campbell's cream of chicken soup
  • 1/2 small can of Campbell's cream of cheddar soup.
  • Bread Crumbs 
  Instructions:
  1. Preheat your oven to 350 degrees. 
  2. Cook your rice according to the package. 
  3. Add soups, veggies, and chicken to your rice and mix well. 
  4. Pour mixture into a greased casserole pan.
  5. Sprinkle bread crumbs over the top. 
  6. Bake at 350 degrees for 30-45 minutes.  My oven is old, so it took about 45 minutes to heat through and brown the edges. 






The second is
Crock Pot Chicken Taco Chili
I found this recipe on pinterest.com.  It is a Weight Watchers recipe from Skinnytaste.com.
 Ingredients:


  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • 1/4 cup chopped fresh cilantro
Directions:
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

I changed the recipe a bit by adding the pre-cooked chicken.  I ended up cooking it on low for about 8 hours.  I also added some green onions, because I had some to use up.


Both were fantastic and very easy to make!
