This is another Pinterest recipe (I have a binder full now).
Ingredients:
1 lb Ground beef
29 oz tomato sauce (I used Ragu)
8 oz pkg. of lasagna noodles, uncooked
4 cups shredded mozzarella cheese
1 1/2 cups cottage cheese or Ricotta cheese (I used Ricotta)
Directions:
- Spray the inside of the crock-pot with cooking spray.
- Brown the ground beef.
- Stir the tomato sauce into the ground beef.
- Spread 1/4th of the meat sauce on the bottom of the crock-pot.
- Arrange 1/3rd of the uncooked noodles over the sauce (you can break them into pieces so they fit properly).
- Combine the cheeses in a bowl. Spoon 1/3rd of the cheese over the noodles.
- Repeat these layers twice.
- Top with remaining sauce.
- Add Mozzarella cheese to the entire top.
- Cover and cook, on low, for 4 hours.
- Let the lasagna stand in the crock-pot, with the lid off for at least 10 minutes.
And for desert...
No-bake energy bites. Theses are also great snack for the middle of the day. Best part is that they are healthy!
Directions:
1 cup oatmeal 1/2 cup peanut butter (or other nut butter) 1/3 cup honey 1 cup coconut flakes 1/2 cup ground flaxseed 1/2 cup mini chocolate chips 1 tsp vanilla Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
*I am not a fan of coconut, so I substituted that will sliced almonds.
